Healthy berry pancakes

Healthy living doesn't have to be boring. There is always ways to make your favorite dishes Healthy. For the past couple of months my breakfast had some variation of Egg, wholemeal bread, peanut butter and a banana. So I wanted to have something different for breakfast.

Pancakes have been a delicious yet calorie ladden breakfast for years!

However, you only need to be determined enough to research and find healthy versions of this yummy breakfast.

Although most recipes I found had bananas. Now I love bananas! I have it everyday.  But mostly I like bananas as bananas. Not really a fan of banana smoothies!

So I made my pancakes with Mixed berries.

Berries are very good for your body. They have antioxidants, and fiber that promotes a healthy digestive system, good heart health and sharp memory.

Pretty much all of my smoothies have berries and its something I have a few times a week.
So for myself and as something different I made Healthy, berry pancakes

.
The recipe makes 3 medium pancakes fit for 1 person for a meal.
This breakfast is about 192cals in total.

Ingredients:
1 Egg
1/3 Cup mixed berries
1tsp Honey / maple syrup (optional)
20g raisins  (optional)

1. Break egg and whip until smooth.
2. Cut up the berries into smaller pieces and add to egg mixture.
3. Heat up medium sized pan with cooking spray.
4. Get a ladle or deep spoon and collect part of mixtures and put onto pan.
5. Wait until the pancake bubbles then turn over.
6. Make 3 pancakes!

Healthy Living

So I do a lot of research on Weight loss, Healthy recipes and Fitness.

In my background, I used to be very skinny before my family and I moved to Australia. Then I was introduced to chips and sodas and junk food. I didn't know any better and no one told me that it was unhealthy. So naturally I put on weight. But I was blind to it. Coming from a 3rd world country being overweight or obese is not something that was in my radar. But then suddenly I noticed that I have this big tummy, that I have Stretchmarks!!! The transformation seemed to have happened overnight.

Me before putting on weight.
After putting on weight.

At the time I didn't know where to go for help. So I told myself (like I have for many other things I've wanted) when I'm working and have the money I will join a gym and do something about it. I'm not someone that likes to depend on other people. Even my own parents.

But the I was introduced to a weight loss program called Healthpointe2.0. I'm not going into it because I'm not selling anything.

But it was a good program and the things I learned from them were very valuable. I never starved myself etc. I had 3 main, healthy meals and 3 snacks along with supplements. So I learned a lot about good nutrition from it. By the end of the program I lost 15kgs in 6wks. :)

I have a very stubborn mind. So while on the 6wk program I stuck to it 100%. But after I finished it I went a bit slack. Now I didn't gain back all the weight I lost. but I did gain about 5kgs. Like everyone my weight fluctuates as well.

Last year I joined a local gym and I am regular at the classes there. I enjoy it and workout about 5 times a week. However, for the last 2 months I participated in another weight loss challenge. A few good things came from it.

1. I'm very close to my weight goal.
2. My mind set changed from having a weight goal to having a Body Fat Percentage goal.
3. I began living a healthy eating lifestyle.

The last is the reason I'm writing this blog post.

I DON'T eat 100% healthy. In fact I went out to a Korean BBQ last night!

I have changed my ways for when I'm at home, work or studying.
Now I'm constantly looking for healthy recipe ideas, healthy snacks and healthy ways to make my favourite dishes. (I was looking up healthy pancakes just this morning! ;) )

I'm very active and all those things I told myself I will do with my own money? Well slowly I'm doing them! You can follow my progress and my journey here or on my Instagram :)

The reason I'm writing this blog is because I want to share this journey with whoever is interested. From my own research I know there are thousands of similar bloggers out there. But this is also for myself. To keep my motivation high and just engage with the world at hand.

The Current Me that's accomplishing my dreams!

So I hope you enjoy what I have to share when it comes to My Healthy Living Journey! :)
